The Department of Food Technology organised the workshop on 25th July 2026 at the Kitchen Lab. The event helped students strengthen practical skills while exploring career opportunities in the food processing industry. The workshop combined hands-on learning with industry-focused knowledge. Students learned modern preservation techniques, prepared different fruit products, and received expert feedback. Such initiatives continue to showcase the commitment of Kerala campuses to skill-based education and innovation. Sweet Alchemy Workshop Focused on Practical Food Processing Skills The Department of Food Technology organised “Sweet Alchemy – Workshop on Fruit Preservation and Value-Added Product Development” on 25th July 2026 at the Kitchen Lab. The workshop offered students direct experience in fruit preservation techniques. They also learned the preparation of jams, jellies, and other value-added fruit products. Moreover, the sessions covered important industry topics, including: Food safety practices Quality control measures Product packaging Entrepreneurial opportunities in the food processing industry As a result, students improved their practical knowledge and gained confidence to explore careers and business opportunities in fruit processing. Students Prepared a Variety of Value-Added Fruit Products As part of the workshop, students prepared several value-added products using different fruits. The products included: Gooseberry Jam Mint Lime Jelly Dates Jam Green Apple Jam Dates Jam Muskmelon Jelly The hands-on activity allowed students to apply classroom knowledge in a practical environment. It also encouraged creativity and product development skills. Principal and Industry Expert Evaluated Student Products The prepared products were judged by Dr. Shaju Ouseph, beloved Principal, and Mr. Joan John, Chef and Production Head, Department of Hotel Management. They tasted every product and shared valuable feedback with the students. Their evaluation focused on: Flavour Texture Quality Their guidance helped students understand industry expectations and improve their practical skills. Kerala Campus Promotes Skill-Based Learning The Sweet Alchemy Workshop reflects the growing emphasis on practical education in Kerala higher education institutions. Such programmes help students bridge classroom learning with real-world applications. Workshops like this also inspire young learners to explore entrepreneurship in food processing.
